White chicken chili is a very easy to make chicken dish that is also made in short time .It only calls for only 5 ingredients .

In addition to only calling for a handful (get it, a handful) of ingredients, this easy white chicken chili recipe also can be made and on the table in just 15 minutes.  Definitely a perfect busy weeknight meal, and it also makes great leftovers and can be frozen for later.  So if you like it, consider making a double or triple batch and you will have multiple dinners prepared and ready to go in minutes.

Ok, are you ready for the secret ingredient?

This delicious salsa single handedly provides pretty much all of the seasoning you need for white chicken chili!  It’s flavorful, has a bit of heat, and a bit of tang, and pairs perfectly with delicious chicken broth, shredded chicken, and white beans.  I do like to add a little ground cumin to the mixture just to enhance the flavor.  But when I discovered the salsa trick a few years ago, I was amazed.  Such a great shortcut!

If you are in a hurry buy pre-made salsa verde for this.  But if you want to make homemade tomatillo salsa verde, I have a delicious recipe on the blog that I recommend.  It’s so simple to make at home, and so good!

If you want to get fancy and add a few toppings to this soup, I love throwing in some diced avocado, fresh cilantro, green onions, and occasionally some sour cream or shredded cheese.  But it’s also delicious as-is with just five ingredients.

Description

This delicious and easy white chicken chili recipe can be made with just 5 ingredients in 15 minutes!

Ingredients

  • 6 cups chicken stock
  • 4 cups cooked shredded chicken*
  • 2 (15 ounces) cans Great Northern beans, drained
  • 2 cups (16 ounces) salsa verde (store-bought or homemade)
  • 2 teaspoons ground cumin
  • optional toppings: diced avocado, chopped fresh cilantro, shredded cheese, chopped green onions, sour cream, crumbled tortilla chips

Instructions

  1. Stovetop Method: Add chicken stock, shredded chicken, beans, salsa and cumin to a large stockpot, and stir to combine. Heat over medium-high heat until boiling, then cover and reduce heat to medium-low and simmer for at least 5 minutes. Taste and season with salt and pepper, if needed. Serve warm with desired toppings.
  2. Slow Cooker Method: Add chicken stock, chicken, salsa and cumin to a slow cooker, and stir to combine. Cook on low for 6-8 hours, or high for 3-4 hours. Add the beans during the last half hour of cooking. Taste and season with salt and pepper, if needed. Serve warm with desired toppings.
  3. Instant Pot Method: Add chicken stock, chicken, salsa and cumin to an Instant Pot pressure cooker, and stir to combine. Close lid securely and set vent to “Sealing”. Press “Manual”, then press “Pressure” until the light on “High Pressure” lights up, then adjust the +/- buttons until time reads 8 minutes. Cook. Once the soup has cooked, very carefully turn the vent to “Venting” for quick release, and wait until all of the steam has released and the valve has dropped. Remove the lid, and stir in the beans. Taste and season with salt and pepper, if needed. Serve warm with desired toppings.

Notes

*4 cups shredded chicken is equivalent to approximately 2 boneless skinless chicken breasts. Feel free to use the raw chicken breasts in the slow cooker method, then shred them once the soup (and chicken) is fully cooked.

Tips for Making Grilled Chicken Kabobs

  • If using wooden skewers, soak them for at least 10 minutes in water to prevent them from burning.
  • Cut the chicken and peppers in uniform sizes so the meat cooks evenly.
  • When coating the chicken and vegetables, coat generously so all the pieces are in the chicken kabob marinade.
  • Grill chicken over medium heat. The heat will give the chicken a nice sear and cook thoroughly inside as well.
  • Don’t OVERCOOK the chicken.

How Long to Grill Chicken Kebobs: Cook them from 12-15 minutes, or until a meat thermometer inserted into the largest part of the chicken reads 165°F.

What Vegetables Can I Use for Chicken Kabobs?

In this chicken kebob recipe, we used green and red pepper with red onion. However, you can use your favorite vegetables or a mixture of them. Here are some variations you can use:

The easiest recipe for grilled chicken kebobs with vegetables in a garlic and lemon Ranch marinade. Perfect for grilling season and can be made in advance.

Ingredients

  • 4 chicken breasts
  • 1/2 red bell pepper
  • 1/2 green bell pepper
  • 1/2 red onion

Chicken Kebob Marinade

  • 1/2 cup ranch dressing (recipe given below)
  • 3 Tablespoons oil
  • 2 cloves garlic minced
  • 2 1/2 Tablespoons lemon juice freshly squeezed

Instructions

  1. Cut chicken and vegetables into uniform bize-sized pieces.
  2. In a bowl or freezer bag, combine the Chicken Kebob Marinade ingredients.

  4. Thread chicken and vegetables onto skewers.

Buttermilk Ranch Dressing & Dip… This is a delicious and fresh-tasting dressing. Made with a simple base of mayo, sour cream and buttermilk and a variety of seasonings and fresh herbs.

  • 1 cup buttermilk

This is an easy chicken parmesan dish which is one of my favorite dish.It is very tender ,juicy and crisp on the outside.Its preparation is very simple that is just take thin cut chicken breast and bread it in the mixture of parmesan cheese and panko breadcrumbs.Pan fry it until its color gets golden brown and top it with marinara and mozzarella cheese.After it gets baked in the oven for a few minutes until the cheese is gooey and melted.The best thing about this dish is that it stays crispy and does not get soggy.

This recipe involves three step breading process that is parmesan cheese+breadcrumbs, flour and eggs.Boneless and skinless chicken breast is used in the preparation of this dish.Pound this chicken breast in 1/2 inch thickness because it keeps chicken juicy and tender.

Broil: Place chicken in a pan or sheet tray and top with mozzarella cheese. Broil on high until melted and bubbly.

Baked Chicken Parmesan

If you want to bake the chicken instead of pan frying then I recommend baking in a 400 degree oven for about 15 minutes or until the chicken reaches 165 degrees.The breading instructions and ingredients for the baked Parmesan chicken are same as pan frying.

What makes this recipe the best

  • Replacing some of the breadcrumbs with parmesan cheese helps to keep the breading crispy on the outside and super cheesy.
  • Pounding the chicken to a 1/2 inch thick keeps the cooking time down resulting in a juicier and tender piece of chicken. It also helps the chicken to cook evenly.
  • I start with a hot pan and make sure not to overcrowd the pan. This will ensure the chicken is extra crispy and never soggy.

Can this recipe be made in advance?

Yes! You can prep this recipe by breading the chicken in advance and freezing. When you are ready to eat place frozen chicken in a 350 degree oven for 25-30 minutes or until the internal temperature reaches 165 degrees.

4 .To form a little thick batter mix everything with a little water.The consistency of the batter should be like if you dip a chicken piece into the batter it should coat the chicken piece.

5 .Then add all the chicken pieces to the batter.Then heat oil for deep frying.Now add green chili and curry leaves and fry them for a minute. Set them aside and this is a trick to give a nice flavor to the oil for the preparation of the pakoras.

6 . Now add the coated chicken pieces to the oil and fry them on a medium heat till the coated chicken pieces colour turns to golden brown.Now chicken pakoras are ready to serve.

Note: Use even chicken pieces as it will help the pakoras to cook perfectly and serve it with sauce.

If you want to skip green chili and curry leaves its fine but i recommend it.

Dont keep the batter unattended for a longer time as the batter will leave water .

1 .After cleaning the chicken marinate it with tandoori masala,lemon juice,yoghurt, ginger garlic paste,turmeric powder,kashmiri chili powder and salt. Note that store bought tandoori masala and chicken masala has already salt in it so add only a little salt.

2 .In a wide tawa or pan heat oil and season with curry leaves and cumin seeds.

4 .Then saute capsicum,onions,crushed garlic and green chilies along with a pinch of sugar for a few minutes.

5 .Now add saute chicken in the wide pan and saute the chicken with onion mixture on a high flame

Boneless chicken is preferred for this recipe but you can use small pieces of chicken.

Tandoori masala is used in the preparation of this dish and you can use tandoori masala of any brand which is easily available to you or you can use any chicken masala or alternatively you can use (garam masala powder+chilli powder+food colour)

You must use coarsely ground fresh black pepper powder because that matters so please use only fresh coarse ground black pepper powder.

Ingredients To Make Chicken Spring Roll

Take 10 spring roll wrappers

Finely sliced onion 1

Ginger garlic paste 1 tsp

Minced chicken 1 cup

Finely chopped 2 carrots

Finely cut 2 spring onions

Finely shredded 1 cup cabbage

For frying 2 tbsp oil

Salt to taste

Whiter pepper powder 1/4 tsp

Soy sauce 1 tbsp

Cornflour/cornstarch 1 tbsp

In a non stick pan heat 2 tbsp oil.Add onion and cook till translucent.

Add the garlic ginger paste and saute for a minute.Then add the minced chicken and fry well till the chicken is thoroughly cooked.

Mix in carrots ,spring onions,salt,cabbage and toss.

Add soy sauce and pepper and mix well.cook until vegetables become soft.

Take the pan off the flame and set aside the pan to cool down.

In a kadai heat sufficient oil and make a cornflour paste with 2 tbsp of water.

Place a portion of stuffing on each side of the wrapper.Roll tightly by folding the edges.

On the open ends apply cornflour and seal.Keep the rolls under a damp cloth.

Now deep fry the rolls in hot oil til golden brown.Serve hot.

Stock chicken (hot) 1 gallon

Seasoning according to stock

Method

Melt butter in sauce pan, stir in flour to make a smooth roux.Cook roux slowly for 5 to 6 minutes; do not brown.

Slowly whip in stock until thickened and smooth.Check seasoning.Continue to cook sauce for 30 minutes.

Strain and reserve for intended usage.

Variations: with addition of cream the above sauce becomes supreme sauce.With addition of egg yolks and lemon juice it becomes sauce allemande.

Ingredients To Prepare Chicken Pate

(1) Bacon rashers (slices)   225 g/8 oz  or   1/2 lb in American

(2) Raw chicken ,thinly sliced  350 g/12 oz Or 3/4 lb in American

(3) Butter 50 g/2 oz  or  1/4 cup in American

(4) Medium onions chopped  1 or 1 in American

(5) Garlic cloves crushed 1-2  or 1-2 in American

(6) Lambs Liver sliced 350 g/12 oz or 3/4 lb in American

(7) Salt and pepper to taste or to taste in American

(8) Mustard powder 1/2 teaspoon or 1/2 teaspoon in American

(9) Chopped thyme 1/2 teaspoon or 1/2 teaspoon in American

(10) Double heavy cream 2 tbsp or 3 tbsp in American

(11) Eggs 2 or 2 in American

(12) Stuffed olives ,sliced 100 g/4 oz or 3/4 cup in American

(13) To garnish:

Chicken stock   225 ml/8 fl oz or 1 cup in American

(14) Gelatin 7 g/¼ oz or 1 in American

(15) Dry sherry or coconut cream 2 tbsp or 3 tbsp in American

(16) Sage sprig or sprig in American

Method

De rind the bacon discard the rinds and cut the bacon into pieces the size of matchsticks.Cut the sliced chicken in matchstick pieces,too.Heat the butter in a large frying pan (skillet), fry the onion .garlic and liver for 5 minutes.Put this mixture through a mincer (grinder) or chop finely in a food processor. Blend the liver mixture with the bacon and chicken.Add salt pepper mustard , herbs,cream and eggs.Mix thoroughly then add the slices olives; turn these carefully in the bacon and chicken mixture. Spoon into the terrine or 900 g/2 lb ovenproof dish,smooth flat on top.Cover with a lid or buttered foil.Stand the dish into the bain marie (tin of cold water)and bake in the center of a very moderate ,oven ,160°C/325°F Gas mark 3,for 1¼  hours.Remove the lid or foil and place grease proof (waxed) paper and a light weight on top of the mixture.Allow to cool remove any excess fat from the top of the pate .Heat half the chicken stock in a saucepan, sprinkle the gelatin on top and stir to dissolve.Add the remaining cold stock and the sherry or coconut cream.Allow this jellied mixture to cool until it is the consistency of a thin syrup, then spoon over the pate.Arrange the sage leaves on the half set coating.Leave until firm.Serve with hot toast.This pate should be eaten within 48 hours of cooking.It can be frozen up to 1 month.
