1 cup finely slivered green papayaThai chillies 5Garlic cloves  5Shelled roasted peanuts 2 tbspFish sauce  1 tbspPalm sugar  1 tbspLimes  1-2Dried shrimps (optional)  1 tbspSmall tomatoes  1-2

Method

1 . Pound the chilies and garlic in a mortar until the chilies are reduced to small bits and garlic is crushed.

2 . Add 1 tablespoon of fish sauce,1/2 tablespoon of palm sugar and then squeeze the juice from 1-2 limes into the mortar.Mix and pound the dressing making sure that the palm sugar gets fully dissolved into the liquid.

3 .Add 1 tablespoon of dried shrimps,handful of roasted peanuts and then roughly slice in the tomatoes into the mortar.Pound the mixture lightly for about 30 seconds.Lightly breaking up the tomatoes,shrimps and peanuts.

4 .Toss dressing and a big handful of papaya dressing together.Mix well so that the dressing coats all the green papaya and that salad is evenly mixed through and through.Now the salad is already for serving.

Ingredients

For Salad

1 large Chinese cabbage thinly sliced

5-6 green onions thinly sliced.

For Dressing

Canola oil  1/2 cup

Cider vinegar or rice vinegar  1/3 cup

Sugar  1/4 cup or stevia sugar 2 tablespoons

1 Tablespoon coconut aminos or soy sauce

Sesame oil 1 teaspoon

For Crunchy Topping

Butter Margarine 2 tablespoon

Olive oil 1 tablespoon

1 packet ramen noddles broken in to small pieces (any flavor)

Slivered almonds  1 cup

Salt to taste

Method

Mix green onions and sliced cabbage in a bowl.

Combine dressing ingredients in a jar with a tight lid and shake well to mix it.

Over the cabbage mixture pour the dressing and toss to coat and set aside.

In a large frying pan melt the butter and stir in olive oil.

Add broken noddles,salt and almonds if desired.

Saute until nuts and noddles get  light golden brown color.

Sprinkle almonds and crunchy noddles over the cabbage mixture.

Ingredients And Their Quantities

Boil 3 medium size yellow potatoes and chop them.

Boil 3 medium sized carrots and chop them.

Boil and chop 6 eggs.

3 medium size pickles in brine, peeled and chopped.

1/2 sweet onion large or 1 if small chopped

15 oz can peas,rinsed

1 cup of mayonnaise

1 tbsp Dijon mustard or any other mustard you preferred.

Salt and pepper to taste

Method

The Preparation of Russian salad needs some time and there are some cooking steps involved in the preparation of this salad because the eggs and vegetables should be cooked and cooled off before they are chopped.

The steps involved in the preparation of this salad are as under.

Step 1

Place the eggs in a pot containing cold water.Boil the eggs for 10 minutes and let them cool before peeling.

Step 2

Place the unpeeled potatoes and carrots in a pot of water and add a tablespoon of slat in the pot and boil the vegetables..Cook until the vegetables are fork tender for about 20-25 minutes.Remove from water and let it cool off fully before peeling.

Step 3

Chop and peel the pickles.Peeling is optional and my suggestion is peeling is better because they taste better in the salad without tough skin.

Step 4:

Chop the onions.

Step 5:

Rinse and strain canned peas.

Peel and chop carrots, potatoes and eggs in cubes

Place the ingredients in a large bowl and mix them together.

Combine mustard , mayonnaise and pepper in a small bowl.Add it into the salad ingredients and mix all together.

Important Tips For Making Russian Salad

Do not add salt to your mayonnaise mixture because mayonnaise and Dijon mustard have a lots of salt in them.Dress your salad first then taste it and then add the salt if needed.Always remember that salt can be added at anytime but you cannot take it away.

2. Peel and cut potatoes in 3/4 inch cubes.Boil until nearly tender.Keep slightly undercooked.Place pot of potatoes in sink and let cold water run in until potatoes are cool enough to handle, but still warm.

3. Drain very well and toss with french dressing and small amount of salt and pepper.Let stand until cool enough to combine with mayonnaise mixture.

4. Combine all ingredients and adjust seasoning if necessary.

5. Serve in lettuce cup.

NOTE: Potatoes will crush somewhat when mixing.It is important that they are not overcooked to prevent complete masking.Consistency may be adjusted as required.
